Welcome to day two of quick and healthy 40FRESH breakfast options. Same as yesterday, all of the options below can be made in under 15 minutes, so they’re perfect for days when you need to get out the door quickly. Let’s get to it!

Traditional Breakfast: Fresh Fruit

If you’re used to sugary treats for breakfast, a bowl full of fruit is a great replacement option that’s easy to quick to prepare. To save money, shop for the fruits that are in season. Sometimes fruit on its own can leave you feeling a little empty, so a hard boiled egg makes a great pairing.

You can keep this breakfast feeling fresh by rotating your fruit lineup and incorporating some of the less common fruits, on occasion. Papaya with a squeeze of lemon juice is a delicious treat. Another fruit you may not have picked up is a dragon fruit. They might look intimidating on the outside, but there is quite a treat waiting on the inside (here’s a video on how to peel one). If you like sour, a grapefruit cut in half with a tiny bit of sugar dusted on top is quite delightful. They’re easier to eat with specialty spoons like these ones

Mobile Breakfast: Refreshing Smoothie

Smoothies are one of my favorite things to make in the morning. They are easy to prepare and there are endless ways to combine ingredients. Plus, if you’re not a huge fan of vegetables, smoothies can be a way of consuming some of those veggies you would typically avoid. 

Some of my favorite smoothie options are the ones that taste incredibly refreshing. There’s nothing like starting off your day feeling like you just walked straight out of a spa. We like this refreshing cucumber pineapple smoothie from the Clean Eating Kitchen. Note that the recipe calls for coconut water. Pure coconut water is a 40FRESH Always item, but a lot of coconut water you find these days has additives, so make sure to double-check the ingredients.  Here’s an example of what you’re looking for. Note the ingredients: 100% pure coconut water. 

Unusual Breakfast: Strapatsatha

What is that strange word, you ask? Strapatsatha is a Greek breakfast that combines fresh tomato and scrambled egg. If you’ve never had it, you’re missing out! We like this rockin’ recipe from Head Bangers Kitchen. 

If you have a bit more time, there are plenty of ways that you can add variety to this dish. Personally, I like to add a bit of fresh chopped onion or shallot and a few basil leaves. You can also experiment by adding different spices like paprika or oregano. However you make it, this is a worthy addition to your breakfast lineup!
