Our Story
Ask yourself a simple question: When was the last time I felt amazing about the food I eat?
If you’re like most people, the answer is “not in a long time!” Our modern food system is polluted with foods that have been engineered and processed to the point that they barely resemble the plants and animals they came from. We don’t feel great about eating all this junk, but it’s no surprise we do. After all, ultra-processed foods are extremely convenient and tasty. Plus, who has the time to eat healthy?
Unfortunately, the human body is ill-adapted to the Western diet. People are sicker, fatter, and more unhealthy than they have ever been. Have we taken food too far?
40FRESH blossomed from the idea that we should strive to eat more like our ancestors did for thousands of years: natural and fresh. As an experiment, 40FRESH founder Austen Rustrum decided to see what would happen if he completely eliminated ultra-processed foods from his life. Within two months, he had not only lost 25 pounds, but was feeling healthier and more energetic than ever before.
Unfortunately, eating all natural food turned out to be extremely difficult. In the United States, over 73% of our food supply is made up of ultra-processed foods. Yikes!

About the Founder
Austen resides in a small suburb of Portland, Oregon with his wife, daughter, step-daughter and two Australian labradoodles. He has spent several decades working in tech and currently works as a technical product manager for a major eCommerce company.
When he’s not concocting new health programs, you can find him reading, cooking, and doing pretty much every outdoors activity imaginable.
