We are on day three in our series on quick and healthy 40FRESH breakfast options! Same as the past few days, each of the recipes below can be made in under 15 minutes. So without further adieu, let’s get to the recipes!

Traditional Breakfast: Avocado Toast

What kind of cruel world would it be if we couldn’t have avocado toast? We’re guessing that you probably have your own favorite recipe already. However, in the off chance you don’t, try out this Tomato Avocado Toast recipe from Every Day Easy Eats. Add in a fried egg and you might be full until dinner!
Now we will say that this recommendation comes with a HUGE caveat because nearly every store bought bread falls into the Nope category. While you can certainly make your own mouth watering bread at home using a bread maker (affiliate link), that’ll definitely take you more than 5 minutes. If you recall from our deep dive into NOVA, breads made from water, flour, salt and yeast are permitted. These can be a little difficult to find, but you’re looking for an ingredients list similar to the one found on this bread. As we discussed on our grocery store recon day, your best bet is in the bakery section.
Mobile Breakfast: Creamy Smoothie

In addition to being a wonderful topping for toast, avocado makes a great addition to smoothies! We love this recipe from I Heart Naptime because it imparts the wonderful creaminess of avocado without making it feel like you’re slurping down a bowl full of guacamole. Make sure to check the notes section at the end of the recipe for some additional variations.
Unusual Breakfast: Cilbir
Estimated Time: 15 minutes
Today’s unusual breakfast pick is another dish from the Mediterranean region. This time we head over to Turkey for a savory egg and yogurt dish called cilbir. We like this version from My Recipes, which swaps the poached egg for a fried egg.
The recipe does call for Greek yogurt, so you’ll need to make sure you’re scanning through the ingredients lists. Many Greek yogurts have additives that vault them into the Limited or Nope categories. It’s okay if the yogurt has live cultures in it, but try to avoid other additives.
Your Breakfast Menu
You know the drill by now. It’s time to get out your food journal and pencil in your choice for Wednesday’s breakfast. Same as before, you can take one of the options from today (or previous days) or pick your own. Once you’ve made your choice, make sure to add any ingredients you need to your shopping list.
