Traditional Breakfast: Veggie Omelette

Estimated Time: 15 minutes

There are endless combinations of ingredients that you can use to create a savory veggie omelette. We recommend this guide from Alpha Foodie that covers numerous different methods for preparing the perfect veggie omelette. Whether you like your omelette broiled, incorporated, or flipped, all the techniques and tips are covered.

If you’re not feeling particularly creative, she also includes a recipe for a western style omelette as part of the guide. We do like her advice to “eat the rainbow” and mix different colored veggies together. This will help ensure you’re getting a well-rounded and nutritious meal.

Mobile Breakfast: Peanut Butter Granola Bars

Estimated Time: 15 minutes

For a breakfast that’s easy to eat on the move, try these no bake peanut butter granola bars from Beaming Baker. These only require three ingredients and you can make a single batch in 15 minutes that will last you all week long.

These are a great alternative to throw in your lineup for days where a smoothie isn’t sounding fulfilling. Or better yet, pair it with a smoothie!

Unusual Breakfast: Changua

Estimated Time: 15 minutes

Changua is a common breakfast dish from Bogotá, the capital of Columbia. It’s a simple preparation and as long as you’re not lactose intolerant, a unique addition to your morning menu. Try out this recipe from My Columbian Recipes for an authentic take on the dish.

This dish is traditionally served with bread. Make sure if you do add a bread pairing that you pick one that’s in line with the 40FRESH rules as most breads fall into the Nope category.

Your Breakfast Menu

Congratulations, you’ve officially made it through all our weekday breakfast recommendations! Pull out your food journal and write in your choice for Friday’s breakfast. Don’t forget to add any ingredients you need to your shopping list. We’re going to be starting our breakfast habit in a few days, so now is a great time to experiment with ideas to find out what works for you.

Up Next...

Woohoo, you’re through with all the weekday breakfast planning! Hold steady with your snacking and drinking habits and don’t forget to mark off another X on your accountability calendar. Tomorrow, we’re going to be finishing up the week with some more involved breakfasts to consider for the weekend or whenever you have a bit more time.
