This is our last day looking at healthy breakfast menu items. While these recipes aren’t super quick, they’re all extremely healthy and delicious. Some of our favorites are in today’s article and we’re excited to share them with you!
After today, you should have a complete menu and a full shopping list. Only two days before you start eating 40FRESH for all your breakfast meals! Your breakfast habit starts on day 21.

Savory Breakfast: Salmon Hash

Hashes make for an excellent weekend brunch item. In fact, they are so hearty and filling that you might consider having them for dinner on occasion, too. Rather than use a protein like corned beef (which is generally a Nope when bought from the store), consider using something a little less processed, like salmon.
If you want to cook up the rainbow, we think this recipe from Sarcastic Cooking looks beautiful and tasty. The caveat here is that you really want to find wild, line-caught salmon. Farmed salmon contains preservatives and artificial colors that you don’t want to be polluting your body with. Sweet Breakfast: Cinnamon Toasted Oats Parfait
Estimated Time: 30 minutes
The secret to an incredible parfait is stellar toasted oats and we don’t think you can do much better than this recipe for cinnamon toasted oats from Whisking Mama. What’s great is that you can prepare a large batch on the weekend and then have it ready to go all week long. After cooking these up, they can be stored in an airtight container for 4-5 days.
Once you have your oats ready, simply get out a bowl or mason jar and layer in your plain yogurt, oats, and fruit. We like to use assorted berries, but feel free to experiment and use whatever fruits you like best. Drizzle with a bit of honey and you’ve got a versatile breakfast that you can enjoy all week long.
If you’re planning to store this for later, make sure to store the cinnamon toasted oats in a separate container in a dark space. You can pre-make the parfaits (good for 2-3 days in the fridge), but you’ll lose some of the crunchiness of the oats. We think it’s better to just put everything together when you need it.
Unusual Breakfast: Shakshuka

This is one of our favorite breakfast meals of all time! Although this dish originated in Northern Africa, many people associate it with Israel. My first experience with shakshuka was in Tel Aviv and the dish is quite popular there. The dish itself is simple. It’s essentially poached eggs in a bed of tomato sauce. But my, oh my is it delectable!
Downshiftology put together a superb recipe to get you started with your first shakshuka. One of the main ingredients is a can of whole peeled tomatoes and there are quite a few brands that include preservatives and other nasties that land them in the Nope category. Make sure you’re using a brand like Cento that avoids these ingredients to keep this dish in the Limited category.
Finalize Your Breakfast Menu
